Weekly Dish: Charlie’s BBQ & Catering

The smell of Barbecue wafts across the parking lot and as you walk up to the door a cadence of yellows and blues meets your eyes. You walk in and you are greeted with a handshake and hello. You are in Charlie’s Bar-B-Que & Catering located on College Street in Beaumont. 

Charlie’s, which is owned by its namesake Charlie Brewer, first began when Brewer would bring his pit to various night time hotspot; and later in his food truck, selling his signature smoky barbecue to any all. Through determination, community loyalty and encouragement from his wife Sheila Brewer, who he says kept him motivated and saw the progress that he couldn’t, Brewer finally was able to establish Charlie’s Bar-B-Que & Catering within a brick and mortar store.

Charlie’s features a myriad of classic barbecue fare including chopped beef, Turkey legs, links and much more. The ribs are of particular interest featuring the smoky, tender, flavorful meat that it to be expected from Charlie’s. The sides of the plate were creamy potato salad, flavorful baked beans, onions, pickles and two slices of bread. These sides help complete the picture perfect barbecue plate and support the delicious entrée. The flavor comes from time, passion and attention to detail.

“I grew up cooking with Red Oak and Hickory, and that, what I stick to. It’s just that smoke flavor… Everybody wants to cook it quick and that’s not the right way,” said Brewer. “Barbecue takes time, if you want it done right.”

The barbecued oxtails are something unique to Charlie’s and are only served on Saturdays. The smoked to the bone meat paired with rice dressing that is flavorfully representative of traditional flavors, being made from liver and gizzard, and baked beans is sure to excite barbecue fans and newcomers alike. Going light on sauce and primarily using the flavor from smoking the meats, makes the barbecue as tasty as it is traditional. It is Charlie’s traditional take on barbecue not only preserves flavor, but also shows that attention to detail is the key to good barbecue.

“You cannot cook two briskets the same way, its like two different people, they need special attention,” said Brewer. 

Charlie’s Bar-B-Que & Catering is located at 3125 College St. in Beaumont and is open 10:30 a.m. to 6 p.m. on Monday and staying open an hour later on Tuesday through Saturday. For more information or to inquire on catering pricing call (409) 767-7683.
